  1. Make a basic sugar cookie dough by creaming butter and sugar, then adding egg, vanilla, and dry ingredients.
  2. Remove two-thirds of the dough, wrap it, and chill at least 40 minutes until firm and easy to handle.
  3. Color the remaining one-third of dough with green gel food coloring and shape it into a 12″ log; freeze until firm (about 30 minutes).
  4. Roll the chilled plain dough into a 12″ x 6″ rectangle between sheets of wax paper. Place the green log along one long edge and roll to encase the green center. Seal the seam and re-chill the assembled log at least 15 minutes.
  5. Slice the log into 1/4″ rounds, arrange on parchment-lined baking sheets 2″ apart, and bake at 350°F for 8–10 minutes until edges are lightly golden.

Storage

Store cooled cookies at room temperature in an airtight container or a freezer-weight zip-top bag for up to two weeks. The dough log can be refrigerated for up to three days or frozen for up to three months.

Ingredients

  • 1 cup granulated sugar
  • 1 cup unsalted butter room temperature
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • green food coloring gel

Instructions

  • In a mixer bowl, cream sugar and butter until light and fluffy.
  • Beat in the egg and vanilla until combined and creamy.
  • Gradually add flour, salt, and baking powder; beat until just combined.
  • Remove ⅔ of the dough, wrap, and refrigerate at least 40 minutes until it is no longer sticky and is easy to handle.
  • Add green food coloring gel to the remaining ⅓ of dough in the mixer and mix until color is evenly distributed.
  • Shape the colored dough into a 12″ log on plastic wrap, wrap it tightly, and freeze about 30 minutes until firm.
