Recipe for Healthy Gluten Free Chocolate Chip Cookies
These cookies are easy, tasty, and more nutritious than traditional versions — your family will think they’re simply melt-in-your-mouth delicious.
Why the focus on healthy, gluten-free cookies? Here’s a bit of background.
Diagnosed with Celiac Disease in the 1990s
I began concentrating on gluten-free recipes in the 1990s after my own diagnosis. A strict gluten-free diet helped, but I later removed rice, quinoa, potatoes, and corn to further improve my digestive issues and some autoimmune symptoms.
The Grain Free Diet
I transitioned to a grain-free diet and became even more dedicated to this approach when my son was diagnosed with celiac disease in 2001. Restricting a young child’s diet is challenging, so I focused on creating delicious, healthy treats for him — treats that are gluten-free, grain-free, and lower in carbs.
What Is the Paleo Diet?
Long before the term “paleo” was common, we simply called this way of eating grain-free and wholesome.
Keto Diet and Intermittent Fasting
My eating has continued to evolve. Starchy grains and tubers disagree with me, and I do well on a higher-fat approach, so I’ve adopted keto-style habits at times. Intermittent fasting also helps me manage inflammation now and then.

Biochemical Individuals
We are all biochemical individuals and should listen to our bodies. I prioritize foods that make me feel well — for me that means grain-free, and that includes my cookie recipes.
Cookie Recipes Healthy
My cookie recipes use wholesome ingredients. For the chocolate chip cookies I favor high-quality dark chocolate to help keep blood sugar steadier.
Healthy Gluten Free Cookies with Almond Flour
Using almond flour instead of high-glycemic white flour makes these cookies more nutrient-dense while allowing simple ingredient lists and great flavor.
Healthiest Cookie Recipes
Once, “healthy cookies” seemed like an oxymoron. These days that’s no longer true — these almond-flour cookies are:
- Low Carb
- High Protein
- Nutrient Dense
- Gluten Free
- High in Fiber
