I’m excited to be in the kitchen celebrating National Cheddar Day with Tillamook. I wanted to create a recipe that truly showcases cheddar’s flavor and texture — crunchy, creamy, melty, gooey and tangy all at once. The result is a Grain Free Nacho Bar that’s easy to prepare ahead and perfect for a party or a snack.
This recipe combines crispy sweet potato chips, melted Tillamook cheddar, and a variety of fresh toppings so you won’t miss traditional tortilla chips. Everything can be prepped in advance and finished quickly, making it an ideal make-ahead crowd pleaser.
I love Tillamook because they’re a farmer-owned, farmer-led co-op. Their milk comes from cows not treated with hormones, and their cheddar elevates everyday food to something special.

Ingredients
- Pork roast (use your favorite shredded pork — see your preferred recipe)
- Sweet potato crisps (homemade or store-bought)
- 1 pound grated Tillamook Cheddar
- Jalapeño, sliced into rounds
- Marinated red onions (optional)
- Pitted olives, halved
- Avocado crema or a simple avocado-based sauce
- Avocado slices (optional)
- Sour cream
- Tomatillo salsa
Instructions
1. Preheat the oven to 500°F (260°C).
2. Make the sour cream sauce by mixing equal parts sour cream and tomatillo salsa; adjust to taste.
3. On an oven-safe pan, arrange a single layer of sweet potato crisps. Generously sprinkle with grated Tillamook Cheddar, add jalapeño rounds, and bake for about 2 minutes, just until the cheese is melted and bubbly.
4. Remove from the oven and top with shredded pork, marinated red onions, olives, avocado crema and avocado slices. Drizzle with the sour cream–tomatillo sauce and serve immediately.
