Slow-Cooker Caesar Chicken Wraps with Crisp Romaine

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1/2 cup water
  • 1 cup Caesar dressing
  • 1/2 cup shredded Parmesan cheese Optional
  • 3 cups chopped green leaf OR romaine lettuce
  • 6 large Tortillas

Instructions

  • Spray the inside of the crock pot with cooking spray or line it with a slow cooker liner for easy cleanup.
  • Pour 1/2 cup water into the crock pot. Add the chicken breasts, then cover with the lid.
  • Cook on Low for 4–5 hours, or on High for about 2 1/2 hours, until the chicken is cooked through and tender.
  • Remove the chicken and shred it with two forks. Discard the cooking liquid from the crock pot.
  • Return the shredded chicken to the crock pot. Pour the Caesar dressing over the chicken and stir to combine. Cover and heat on Low for 30 minutes, or until warmed through.
  • To assemble, place about 1/2 cup chopped lettuce and a sprinkle of Parmesan on each tortilla. Add about 1/2 cup of Caesar chicken, wrap tightly, and serve.
  • For a gluten-free option, use gluten-free tortillas and a gluten-free Caesar dressing.
