Ingredients

Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup shortening
  • 3 Tablespoons ice water

Filling:

  • 21 ounces strawberry pie filling (canned)
  • Ghirardelli dark melting wafers (or other dark chocolate melting wafers)
  • Egg wash
  • Sugar granules

Instructions

  1. In a bowl, whisk together the flour and salt. Cut in the cold shortening with a pastry blender until the mixture resembles coarse crumbs.
  2. Drizzle 2–3 tablespoons of ice water over the flour and toss with a fork to moisten. Add additional water, a few drops at a time, until the dough comes together.
  3. Gently pat the crumbly dough into a ball, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  4. Remove chilled dough, reserve a portion for the lattice, and roll out the main portion on a lightly floured surface or baking mat. Fit it gently into a pie dish.
  5. Spoon the strawberry pie filling into the prepared crust.
  6. Melt 1 cup of dark melting wafers in a double boiler according to package directions. Once melted, drizzle the chocolate over the strawberry filling.
  7. Roll out the reserved lattice dough and cut into strips. Lay the strips over the pie in a lattice pattern.
  8. Brush the lattice with egg wash and sprinkle with sugar granules.
  9. Place the pie on a baking pan and bake at 400°F (200°C) for 15 minutes. Then reduce the oven to 350°F (175°C) and continue baking about 30 minutes, or until the crust is golden and the filling is bubbly.
  10. Remove the pie and allow it to cool before serving.
  11. Once cooled, melt additional dark wafers and drizzle more chocolate over the top. Optionally, garnish with chocolate-dipped strawberries for an elegant finish.
