Game day is almost here—just a few days away. Everywhere I turn, someone is talking about what to serve on Super Bowl Sunday. My mom and I spent nearly an hour on the phone this morning planning our menu. One of the items I’m bringing is this easy Cheesy Chicken Chipotle Dip.

I used to dunk tortilla chips into that chowder and thought, why not turn the same flavors into a party dip? After a little kitchen testing, I captured those flavors in a thick, cheesy dip that’s perfect for sharing.

For convenience I use a rotisserie chicken—the slow cooking gives great flavor and all you have to do is shred it. You can also use home-cooked chicken or canned chicken if you prefer. This recipe is flexible and forgiving.

One of the best parts of this dip is that you can adjust the seasonings to taste. There’s nothing raw in the mix, so you can taste and tweak before baking. If you like cumin, add a little more. Once everything is combined, give it a quick taste and adjust salt, pepper, or chipotle level to suit your crowd.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 package cream cheese, softened
  • 1 can cream of chicken soup
  • 1 can corn, drained
  • 2 tablespoons chipotle peppers in adobo sauce, chopped (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/4 teaspoon oregano
  • Salt and pepper to taste (start with 1/4 teaspoon each)
  • 2 cups shredded cheese, divided

Directions

Preheat the oven to 350°F (175°C). In a large bowl, mix the softened cream cheese and cream of chicken soup until smooth. Stir in the chipotle peppers and all seasonings. Fold in the shredded chicken, drained corn, and 1 cup of the shredded cheese. Transfer the mixture to a baking dish and sprinkle the remaining cup of cheese evenly over the top. Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly. Serve warm with tortilla chips, crackers, or fresh vegetables.
