How To Make Chocolate Turtles

  1. Line a large baking sheet with parchment paper.
  2. Arrange pecan halves in clusters of four, touching in the center with the pointed ends fanning outward to resemble turtle legs.
  3. Unwrap caramels and place them in a microwave-safe bowl with 2 tablespoons water. Microwave in 30-second intervals, stirring between each, until the caramel is smooth and fully melted (about 1½–2 minutes). Let it cool slightly.
  4. Scoop about one tablespoon of the melted caramel onto the center of each pecan cluster to form the turtle’s shell.
  5. In a separate microwave-safe bowl, melt the chocolate chips in 30-second increments, stirring until smooth.
  6. Use a spoon to drizzle the melted chocolate over the caramel and pecans, spreading slightly with the back of the spoon to cover the caramel and secure the nuts.
  7. Refrigerate the baking sheet for at least 30 minutes to set the chocolate and caramel.
  8. Allow turtles to come to room temperature before serving, or keep chilled for firmer candies.

Storage

To store: Place turtles in an airtight container and keep them at room temperature in a cool, dry spot for up to three weeks. Avoid warm areas so the chocolate doesn’t soften.

To freeze: Layer turtles between pieces of wax paper in a freezer-safe container and freeze for up to two months. Thaw in the refrigerator or at room temperature before serving.
