Strawberry lemonade is a bright, zesty combination that works every time. It makes a wonderfully refreshing snack or dessert for summer. Fresh strawberries give the best flavor, but frozen berries work well if needed. Don’t skip a bit of lemon zest — it adds a lively lift to the popsicles.

The Sweetener

For these popsicles, I recommend avoiding xylitol and allulose. Those sweeteners are great for keeping ice cream scoopable, but in popsicles they can make the texture too soft. Instead, use erythritol — Lakanto’s monk fruit blend is a favorite — or, if you prefer to avoid sugar alcohols, use pure monk fruit extract. If you follow a paleo approach, maple syrup is a suitable alternative.

Storage note: many people avoid freezing food directly in plastic, so metal or BPA-free popsicle molds are a good choice.

Ingredients

  

  • 2 1/2 cups strawberries
  • 1/4 cup water as needed, to blend
  • 2 tablespoons erythritol to taste*
  • 2 tablespoons lemon juice to taste
  • lemon zest

Special Equipment

  • popsicle molds or ice cube trays (BPA-free or metal molds recommended)

Instructions

 

  • Add strawberries and about 1/4 cup water to a blender and process until smooth. Add more water if needed to reach your desired consistency. You can strain the mixture to remove seeds, or leave them in for texture.
  • Add sweetener, lemon juice and the zest of half a lemon. Taste and adjust: frozen treats often need slightly more sweetness than room-temperature ones.
  • Transfer to molds or an ice cube tray and freeze until set, about 3 hours. Store in the freezer for up to three months.

Notes
