Base
- ¾ cup ground walnuts
- ½ cup almond flour
- 3 tablespoons unsalted butter, melted
- 1 teaspoon stevia (or preferred sweetener)
- ¼ teaspoon mixed spice
Filling
- 16 oz cream cheese (softened)
- ½ cup desiccated coconut, unsweetened
- 2 eggs
- ½ cup coconut milk
- ¼ cup erythritol (or other sugar substitute)
- 1 teaspoon vanilla extract
- ¼ cup raspberries, lightly crushed
Instructions
- Preheat the oven to 180°C / 350°F.
- Lightly oil a mini muffin tray or use paper liners suited for baking.
- Combine the coconut milk and desiccated coconut in a small bowl and let them sit for 10 minutes so the coconut softens and absorbs the milk.
- Mix the dry base ingredients (ground walnuts, almond flour, sweetener and mixed spice). Stir in the melted butter until the mixture holds together when pressed.
- Press the base mixture firmly into the bottom of each mini muffin cup to form an even crust layer. Place the tray in the fridge for 15 minutes to firm up.
- Beat the cream cheese until smooth. Add the softened coconut and coconut milk mixture, then blend thoroughly until combined.
- Add the eggs one at a time, mixing until the filling is smooth and homogenous.
- Stir in the vanilla extract and erythritol (or chosen sweetener) and mix well. Taste briefly and adjust sweetness if desired.
- Spoon the filling over the chilled bases, filling each cup nearly to the top.
- Drop small spoonfuls of the lightly crushed raspberries on top of each cheesecake. Use a small spoon or a knife to create a gentle swirl, blending the raspberries into the topping without fully mixing them in.
- Bake for 25–30 minutes or until the centers are just set and slightly firm to the touch. Avoid overbaking to keep the filling creamy.
- Cool the cheesecakes on a wire rack for an hour, then chill in the refrigerator for at least 1 hour to fully set before serving.
- Serve chilled and enjoy.
