
Pull Apart Pie Bites
A festive, crowd-pleasing addition to any holiday table. These pull-apart pie bites are miniature pockets of pie filling encased in golden, flaky pastry—easy to serve and even easier to enjoy. Instructions

Preheat the oven to the temperature specified on the refrigerated pie dough package. Many brands recommend around 425°F (218°C), but follow your package directions for best results.

Remove the pie dough from the refrigerator about 15 minutes before you plan to roll it out. Letting the dough sit briefly takes the chill off and makes rolling easier without over-warming it.

Cut a round piece of parchment paper to fit the bottom of your pie plate or springform pan. Lining the pan makes it simple to lift the assembled bites out after baking and keeps the crust from sticking.

On a lightly floured surface, unroll and gently roll each pie dough sheet until it is about twice its original size. If you are making one full pie, you will typically use two refrigerated pie dough sheets.

Use a 3-inch biscuit cutter, cookie cutter, or the rim of a glass to cut circles from the rolled dough. Try to cut circles close together to reduce scraps, then re-roll remaining dough as needed.

Place 1 to 2 teaspoons of pie filling in the center of each dough circle. Pinch two opposite edges together gently so the dough forms an open pocket that still shows some of the filling—think of a small, open envelope. Avoid sealing them completely; leaving a bit of an opening helps when the bites puff and bake.

Arrange the pockets in a single ring along the outer edge of the prepared pie plate, placing one flavor at a time if you’re using multiple fillings. Continue filling and arranging pockets in concentric rings or rows until the plate is filled. Place the pockets side by side but do not press them into one another—leaving a small gap helps them pull apart easily after baking.

Brush the exposed dough lightly with the beaten egg. This egg wash promotes even browning and gives the crust a beautiful golden sheen when baked.

Bake according to the pie dough package directions for a full pie. Typical baking time can be around 45 minutes, but begin checking around 25–30 minutes. If the crust becomes deeply golden before the end of the bake time, loosely tent the top with aluminum foil to prevent further browning while the centers finish cooking.

When baking is complete, remove the pie plate from the oven and allow the pie bites to cool for a few minutes. Slide the parchment under the bites to lift them gently onto a serving platter. Once slightly cooled, the bites can be pulled apart and served. Keep a small spoon nearby when serving to help lift pieces if they stick together slightly.

Tips and variations: use a mix of sweet fillings—apple, cherry, pumpkin, or pecan work well—or try savory fillings for an appetizer version. For uniform bites, aim for consistent filling amounts and cutter size. Store leftovers covered in the refrigerator for up to three days and reheat gently in a low oven to crisp the crust.
