Ingredients

  • 1/4 cup mashed ripe avocado
  • 7 tbsp coconut butter, melted
  • 3 tbsp pure maple syrup, honey, or agave (or stevia to taste)
  • 1/4 tsp pure vanilla extract
  • Tiny pinch of salt
  • Only if using stevia: add 2 tbsp coconut oil
  • Optional: melted chocolate chips or a simple chocolate sauce for coating

Instructions

  1. If you have a small powerful blender or a food processor, blend all ingredients together until the mixture is completely smooth. If using a larger blender, you may wish to double the recipe for easier blending. You can also mix by hand, but be sure the texture is fully smooth before proceeding.
  2. Spread the blended mixture into a small plastic or metal container, smoothing the top. Freeze until set, at least 3 hours.
  3. When firm, either scoop into balls with a mini cookie scoop or cut into squares for fudge pieces.
  4. To coat in chocolate (optional): combine equal parts unsweetened cocoa powder, virgin coconut oil, and pure maple syrup until a thin sauce forms. Quickly dip each fudge ball into the chocolate, then return to the freezer to harden immediately.
  5. Store leftovers in the refrigerator for up to three days or in the freezer for longer storage. If stored frozen, let sit a few minutes at room temperature before serving for a softer texture.
