Creamy Mango Frozen Yogurt Soft-Serve Recipe

Finally some sunny weather that’s here to stay. I’m at my happiest in the summer months when temperatures climb and the media starts talking about heatwaves. There’s so much to love: clear blue skies, blooming flowers and long hours in the garden. To make the most of warm days, I rely on quick frozen treats that I can whip up in minutes and take back outside to soak up the sun. This frozen mango “froyo” is fast, refreshing and absolutely delicious.

When the weather is as warm as it was today, I get wonderfully lazy. You’ll find me reading in the shade or simply relaxing in the sunshine. As a true child of summer, I can’t get enough of it. The one thing that can lure me indoors for a moment is the urge for a cold snack — and that snack needs to be quick so I can return to catching rays and topping up my vitamin D.

Vitamin D — the sunlight vitamin — is produced in our bodies when we’re exposed to daylight. It supports calcium absorption and healthy bones, so making time outdoors matters. One portion of this frozen mango yogurt supplies a useful amount of calcium, too. Ingredients

  • 500 g frozen mango
  • 150 g vegan yoghurt
  • 1 teaspoon lime juice

Instructions

  • Add all ingredients to a food processor or blender and process until smooth.
  • Spoon into bowls and, if you like, finish with freshly grated lime zest and a few mint leaves.
  • Serve immediately and enjoy.
