When baked properly they become creamy, sweet, and tender — a simple comfort food done right. Below is my reliable method for perfectly baked sweet potatoes, including the one extra step that makes all the difference.

THE TRICK TO PERFECTLY BAKED SWEET POTATOES

Baking is the best method for sweet potatoes. Microwaving can be convenient, but it rarely delivers the same texture and depth of flavor as the oven. When baked correctly, sweet potatoes transform into little pockets of velvety, naturally sweet flesh. My approach is simple and requires a bit of planning: first brine, then roast at high heat.

THE BRINE FOR BAKED SWEET POTATOES

Brining is usually associated with meats because it helps retain moisture and seasons the interior of the food. Applied to sweet potatoes, a salt soak does two things: it gently seasons the flesh and helps produce a creamier interior after baking. For the brine I use 1 cup kosher salt to 8 cups warm water. Place the washed sweet potatoes in the solution and let them soak.

I typically soak them for about 8 hours, but soaking as little as 2 hours still improves the texture and flavor. Because potatoes float, flip them occasionally so they soak evenly; you can also weigh them down with a plate or bowl. After soaking, dry the potatoes thoroughly with a towel or paper towels before arranging them on a baking sheet.

Make sure they’re well dried — excess surface moisture can cause steaming in the oven instead of roasting.

HOW TO COOK PERFECTLY BAKED SWEET POTATOES

Preheat your oven to 450°F (about 230°C). Roast the dried, brined sweet potatoes on a baking sheet for roughly 45 minutes. Larger potatoes may need up to 55 minutes; they are done when a fork slides into the center without resistance.

Roasting at high heat does a couple of helpful things: it cooks the potato quickly, reduces steaming from any remaining surface moisture, and crisps the skin slightly. The result is soft, creamy flesh and a seasoned skin that separates easily when you scoop or peel it. If you prefer the skin, it will be nicely seasoned from the brine; if not, the flesh is the real delight.

Once out of the oven, serve the sweet potatoes hot with your favorite toppings. My go-to is simple: a pat of butter and a crack of black pepper. It’s unpretentious but lets the sweet potato shine. Feel free to experiment — brown sugar and cinnamon, sour cream and chives, or a drizzle of olive oil and a sprinkle of flaky salt all work well.
