I’ll be honest: lunch often becomes an afterthought for me. When I worked in an office I packed leftovers or frozen meals and sat down at a table every day. Now that I work at home, time slips away and suddenly it’s mid-afternoon. Without a plan I’ll reach for something quick and unsatisfying. Over time I’ve learned that making simple, portable meals ahead of time prevents those hungry, make-do moments. Wraps are ideal for that—easy to build, portable and adaptable. These tofu tortilla wraps come together in about 20 minutes and keep well for a few days in the fridge, making them a reliable choice for packed lunches, busy weekdays, or light dinners.

A good wrap is a balance of textures and flavors: creamy, crunchy, salty and fresh. These vegan tofu wraps use seasoned tofu as the main protein, paired with crisp lettuce, ripe tomato, creamy avocado, and a smear of vegan mayonnaise. The tofu is briefly marinated, coated with a savory nutritional yeast mixture, then pan-fried until golden. The results are flavorful and satisfying while remaining light and portable.
WHY USE TOFU?
Tofu is the hero in this recipe because it’s a neutral, versatile protein that takes on flavor easily. For these wraps I marinate tofu in tamari or soy sauce, then press it into a nutritional yeast and seasoning mixture that yields a nutty, slightly cheesy flavor. Extra-firm tofu holds up well when pan-fried and gives a pleasant chew that contrasts with fresh vegetables.
Tofu, also called bean curd, is made by coagulating soy milk and pressing the curds into blocks. It’s convenient to slice and cook in many ways. For this recipe extra-firm tofu is recommended, but firm tofu also works. Avoid silken tofu because it’s too soft to hold its shape when pan-fried.
PRESSING TOFU FOR THE WRAPS
Pressing tofu removes excess moisture and can help it brown and crisp more effectively. You can press tofu with a tofu press or by wrapping the block in a clean kitchen towel and placing a heavy object on top for 10–20 minutes. That said, pressing is optional here if you prefer a juicier texture; I sometimes skip pressing for a slightly softer bite. Choose what you prefer based on the texture you enjoy.

INGREDIENT NOTES
Tofu
Use a 12-oz block of extra-firm tofu for best results. You can press it briefly if you want a drier, firmer texture for browning.
Tamari
Tamari is a Japanese fermented soybean sauce similar to soy sauce but often thicker and less salty. It is commonly gluten-free. If you don’t have tamari, regular soy sauce works well here unless you require a gluten-free option.
Nutritional Yeast
Nutritional yeast gives the coating a savory, cheesy, nutty flavor that pairs wonderfully with the tofu. If you aren’t strictly vegan, grated parmesan or similar hard cheese could be used as an alternative coating.
Vegetables
I used lettuce, tomato, avocado, and red onion, but wraps are very forgiving: switch in cucumbers, shredded carrot, bell pepper, or other favorite veggies. If you plan to meal prep, use cherry tomatoes or keep sliced tomatoes separate until assembly, as they can make wraps soggy over time.
STEP-BY-STEP RECIPE
- Drain the tofu and cut it into 8 half-inch sticks.


2. Pour 2 tablespoons tamari or soy sauce into a shallow dish. Place the tofu sticks in the dish and turn to coat.

3. In a separate shallow bowl, combine 2 tablespoons nutritional yeast, 1/2 teaspoon garlic powder, and a pinch of salt and pepper.

4. Press the tofu sticks into the nutritional yeast mixture so they are well coated on all sides.

5. Heat a large non-stick skillet over medium heat. Add the coated tofu sticks and pan-fry 2–3 minutes per side, until golden brown and slightly crisp.

6. To assemble, spread about a tablespoon of vegan mayonnaise in the center of a 10-inch tortilla. Arrange slices of avocado, tomato, lettuce leaves, red onion rings, an optional slice of vegan cheese, and the warm tofu sticks in a line down the center. Season lightly with salt and pepper, then roll up the tortilla to enclose the filling.

HOW TO FOLD A TORTILLA WRAP
Follow these simple folding tips for a tidy, secure wrap:
- Use a soft, sufficiently large tortilla (10-inch tortillas work well).
- Place a moderate line of filling down the center; overfilling causes spills.
- Fold in the sides toward the center so they nearly meet, leaving a small opening so the filling is visible.
- Rotate the tortilla 90 degrees, tuck the bottom edge up over the filling, then roll tightly while keeping the side flaps tucked in. Roll until fully sealed.



STORING & MEAL PREP
These wraps can be made ahead and stored in the refrigerator for several days. To prevent avocado from browning, brush sliced avocado with a little lemon or lime juice before assembling. If you plan to store wraps for more than a day, consider keeping tofu and vegetables separate and assembling just before eating. Store sliced tomatoes separately or use cherry tomatoes to minimize sogginess. For a gluten-free version, use gluten-free tortillas and tamari.

Ingredients

Instructions
- Pour the tamari or soy sauce into a shallow dish.
- Combine nutritional yeast, garlic powder, salt and pepper in a separate shallow dish and mix.
- Place the tofu sticks in the tamari or soy sauce dish and turn to coat.
- Press the tofu into the nutritional yeast mixture to coat thoroughly.
- Heat a large non-stick pan over medium heat and cook the tofu sticks 2–3 minutes per side until golden brown.
- Spread vegan mayo in a circle in the center of a tortilla. Layer avocado, tomato, lettuce, red onion, optional vegan cheese, and tofu in a line down the center. Season if desired and roll up tightly.
