Over the years tofu went from one of my least favorite foods to one of my favorites. Growing up my father tried to raise us on a macrobiotic diet, and at the time I resisted—this kid didn’t want bland tofu. These days my diet has changed a lot and I cook with tofu regularly. I still eat a wide variety of foods, but tofu is now a staple in the rotation.
The soy debate continues, but I don’t see an issue with tofu itself. I prefer organic and sustainably produced options to avoid GMOs and deforestation. I like my tofu to come from thoughtful, responsible sources.

Tofu Stew

Ingredients
Stew
- 1 brick tofu
- 3 tomatoes
- 1 onion
- 6 cloves garlic
- 1 chili (optional)
- 2 tbsp soy sauce
- water
Spices
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp ginger powder
- 1 cube veggie bouillion
- 1/2 tsp all spice
- 1 handful cilantro (optional as garnish)
Instructions

Heat a large pan with a little oil over medium-low heat. Add the chopped onion and cook until translucent. Add the finely chopped or blended tomatoes and the garlic, and continue cooking until most of the moisture has evaporated.

Add the tofu, chili (if using), soy sauce, spices and the veggie bouillon. Pour in enough water to just cover the ingredients. Bring to a boil, then reduce the heat and simmer with the lid on, stirring occasionally. Simmer for at least 30 minutes — longer if you have the time; the flavors deepen the longer it cooks.

When the stew has cooked to your liking, remove the lid and allow the liquid to reduce until it reaches the sauce consistency you prefer. Garnish with cilantro if desired and serve warm. Enjoy!
