I love summer gatherings—casual get-togethers, birthdays, and backyard parties are my favorite. Since both the USA and I have summer birthdays, I get double the reasons to make festive desserts. The good news: you don’t have to turn on the oven to celebrate. When it’s hot outside, a no-bake treat is ideal.

Rice Krispie treats are one of my go-to no-bake desserts, partly for the nostalgia. My mom used to make them with my sisters and me, so they feel like a classic comfort treat. Cereal combined with gooey marshmallows is an easy crowd-pleaser for every age.

So why not add a little red, white, and blue fun?

One of the best parts of summer celebrations is fireworks—so I borrowed that idea and added Pop Rocks candy to these treats for a playful, popping finish. The Pop Rocks provide both color and a fun fizzy sensation, though the popping effect will fade if added too far in advance. Visually they still look great, so add them just before serving for maximum pop.

I shaped these Rice Krispie treats into popsicles for convenience and fun. Putting them on sticks reduces the sticky mess and makes them easy to hand out or wrap as party favors. If you enjoy novelty kitchen tools, a cakesicle mold gives a retro look and makes shaping simple.

The silicone pop molds are soft and easy to use: press slightly warm Rice Krispie mixture into each cavity with firm pressure, then pop each pop out. If you don’t have molds, press the mixture into a pan, let it set, and cut into rectangles. Dip your sticks in melted coating before inserting to help them stay in place.

After inserting sticks, dip or drizzle the treats with blue candy coating, then immediately sprinkle with red, white, or blue Pop Rocks for that fireworks-inspired spark. In humid climates, keep Pop Rocks sealed until just before topping to avoid clumping.

Ingredients

  • 3 tablespoons butter
  • 10 ounces marshmallows
  • 6 cups puffed rice cereal
  • 1 bag blue candy coating
  • 2–3 packets Pop Rocks candy
  • Paper straws cut into thirds or short lollipop sticks

Instructions

  1. Melt the butter in a large stockpot over medium-low heat. Add the marshmallows and stir until fully melted, then remove from heat.
  2. Stir in the cereal until evenly coated. If using popsicle molds, lightly grease the molds or spray your hands with nonstick spray, then press about 3–4 tablespoons of the warm mixture into each mold. Apply firm pressure to ensure the shape, then demold and set aside. Continue until all mixture is shaped. This yields about two dozen pops.
  3. Melt the candy coating in the microwave at 50% power for 1 minute. Let sit 30 seconds, then stir. If needed, heat in additional 15-second intervals until smooth.
  4. Dip the tip of each paper straw or stick into the candy coating and insert into the bottom of each pop to secure the stick.
  5. If the candy coating begins to thicken, microwave briefly to smooth it again. Transfer the coating to a piping bag or a freezer-weight plastic bag, snip a corner, and drizzle over the pops. Immediately sprinkle with Pop Rocks. In humid climates, keep Pop Rocks sealed until the moment you plan to use them to prevent clumping.
  6. Enjoy! You can make the treats up to a day ahead, but wait to add the Pop Rocks until just before serving for the best popping effect.
