Ingredients

Initial bean cook:

  • 16 ounces dried navy beans
  • 8 cups water
  • 1 teaspoon salt

Baked beans:

  • 12 ounces bacon, cut into small pieces
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 15 ounces tomato sauce
  • 3/4 cup pure maple syrup
  • 3 Tablespoons yellow mustard
  • 3 Tablespoons apple cider vinegar
  • 3 Tablespoons barbecue sauce
  • 1 teaspoon chili powder
  • 1/2 cup water
  • 1 teaspoon kosher salt
  • Black or red pepper, to taste

Instructions

Initial bean cook:

  • Sort through the dried beans and remove any debris. Rinse thoroughly in a colander.
  • Place the beans, 8 cups water and 1 teaspoon salt in the Instant Pot. Secure the lid and cook on high pressure for 25 minutes. Allow pressure to release naturally, then drain and rinse the beans. Clean and dry the pot before continuing.

Cook baked beans:

  • Set the Instant Pot to Sauté. Add the bacon pieces and cook until crisp, stirring to prevent burning. Transfer the bacon to a plate and leave the rendered fat in the pot.
  • Add the diced bell pepper and onion to the bacon fat and sauté for 5–10 minutes until softened, scraping the bottom to release any stuck bits.
  • In a bowl, whisk together maple syrup, mustard, apple cider vinegar, barbecue sauce, chili powder and 1/2 cup water. Reserve the tomato sauce to add with the beans.
  • Add the partially cooked beans, tomato sauce and the whisked sauce to the Instant Pot. Stir gently, close the lid and cook on high pressure for 15 minutes. Allow the pressure to release naturally, then open the lid and stir.
