Savory Cheddar & Crispy Bacon Waffles Recipe

Loaded with sharp cheddar, crispy bacon and fresh green onion, these savory waffles are a delicious twist on the classic. They turn out light and fluffy inside with a nicely crisp exterior. We often top them with a runny egg and, if you like a sweet contrast, a drizzle of syrup — a favorite in my household. These waffles also pair beautifully with a fall soup or stew for dipping.

They make a satisfying breakfast, brunch, or quick bread to serve with soup. Try them alongside a creamy cheese-and-vegetable soup, broccoli-cheese soup, hearty beef stew, or a smoky BBQ chicken chili. With cooler weather arriving, these savory waffles are a comforting, versatile choice.

Give this recipe a try — it’s simple and fun to prepare. Below are the details and step-by-step instructions.

Cheddar and bacon waffles

Cheddar and Bacon Waffles

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: about 12 medium waffles

Ingredients

2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
2 cups milk
1/3 cup canola oil
1/2 cup shredded cheddar cheese
3 tablespoons crumbled cooked bacon
1 green onion, chopped

Instructions

1. In a medium bowl, whisk together the flour, baking powder, baking soda and salt until evenly combined.
2. Preheat the waffle iron according to the manufacturer’s directions.
3. In a large measuring cup or bowl, whisk the eggs with the milk and oil. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
4. Gently fold in the cheddar, crumbled bacon and chopped green onion.
5. Lightly spray the waffle iron with cooking spray. Scoop the batter into the preheated iron, leaving a small gap from the edge to prevent overflow — about 2½ inches if possible. Cook until the waffles are crisp and golden brown. Remove and serve warm.
