Ingredients
- 2 medium zucchini
- 2 Tablespoons (30 ml) olive oil or butter
- 1/2 onion, diced
- 3 cloves garlic, minced (or to taste)
- 2 cups (60 g) spinach leaves
- 3/4 cup (approximately 75 g) parmesan cheese
- Kosher or sea salt, to taste
- Black pepper, to taste
- 1/4 teaspoon (1.25 ml) red chili flakes
Instructions
- Using a spiralizer, make noodles from the zucchini. Set the zoodles aside.
- Heat a large pan over medium-high heat. Add the oil or butter, then sauté the diced onion and garlic until fragrant and translucent. Avoid burning the garlic.
- Add the zucchini noodles and cook 3–5 minutes until tender. Zoodles cook quickly; sample a strand to check for your preferred texture. Do not overcook or they will become mushy.
- Add the spinach and cook just until wilted.
- Remove from heat, stir in parmesan, and season generously with salt, pepper, and chili flakes. Serve warm.
