Gourmet Selects Tuna Fillets lend themselves to creative, fresh dishes. Try the Orange Basil Tuna Quinoa Salad for a bright, satisfying meal that highlights the tuna’s flavor.
Orange Basil Tuna Quinoa Salad
Ingredients
2 cans (4.5 oz.) StarKist Gourmet Selects Solid Light Tuna in Extra Virgin Olive Oil, drained and flaked
½ cup uncooked quinoa
1 orange, zested, sectioned and juiced
2 green onions, thinly sliced
2 Tbsp. chopped fresh parsley
2 Tbsp. sliced fresh basil
2 oz. goat cheese, crumbled
½ cup chopped pistachios
Arugula for serving
Directions
Cook the quinoa according to package instructions. When finished, stir in the orange zest and set the quinoa aside to cool. Using a paring knife, remove the orange peel and pith down to the fruit, then cut sections out by separating along the membranes; halve each section. Squeeze the remaining orange membranes to collect the juice and set aside about 1 tablespoon. In a bowl, combine the cooled quinoa with the reserved orange juice, green onions, parsley, basil, goat cheese and half of the pistachios. Gently fold in the drained tuna and the orange sections. Serve the mixture on a bed of arugula and sprinkle with the remaining pistachios.
